The gastronomic restaurant L’Amandier strives to make you feel the original cuisine of Fez, in its Arab, Berber and Jewish traditions, and beyond, to offer you a culinary journey to the heart of the great culinary markers of the Mediterranean.
AUTHENTIC AND CREATIVE MOROCCAN CUISINE:

In the fertile lands of Fez, seasonal and exceptional products are at the heart of authentic and refined Moroccan cuisine. Each dish is designed to enhance these ingredients, with particular attention to taste, aromas and colors.
The menu offers the great classics of Moroccan gastronomy, faithful to tradition while integrating a touch of creativity. Among them, soups like Harira or royal Bissara infused with cumin open the meal with generosity.
Then come emblematic dishes such as couscous with 7 vegetables accompanied by T’faya, or even tagines with powerful flavors: free-range chicken, veal shank or beef with prunes.
Two flagship dishes are also offered: the Rfissa with farm cockerel, prepared in the pure tradition of Fez with its flaky msemmen, and the Dafina, an emblematic dish of Moroccan Jewish cuisine, slowly simmered with beef, chickpeas, wheat and sweet spices.

Anchored in its territory, the cuisine of l’Amandier focuses on short circuits and also renowned gastronomic partners, from the magnificent Noor oil, ranked among the best in the world, to farm products such as ducks from the Domaine d’Aghbalou near Fez, or its delicate cheeses from the Domaine de la Pommeraie.
Each season, these choice ingredients first of all feed the creative appetite of our Chef Mohammed Achoual: green lentil cream and pan-fried foie gras escalope; the fine, creamy and goat’s cheese tart and eggplant elixir; grilled octopus on a bed of celeriac and virgin sauce emulsion; or the Parmentier of confit lamb, enhanced with a scent of Auvergne blue cheese.
All you have to do is succumb to the last stage of this gastronomic journey by treating yourself to a delicious creamy Mihalabiya with scents of orange blossom and pistachios, or a famous Palais Faraj Macaron with almond cream and cedar honey.
